How sustainable is graphite usage? It's mined, right? Should we stop using it in pencils, to minimize waste of a finite resource?

Don't worry anon, pencil "graphite" is mostly soft clay mixed with graphite and then baked into the final cylindrical shape.

you can straight up make graphite out of carbon dioxide if you apply electricity in the right way, NASA flew a technology demonstrator for the technology on a mars rover earlier but it's way easier than that
