As has already been stated before, ST is falsifiable, just not easily so. The nature of these problems will require future technologies the likes of which we have no hope of achieving within our lifetime.
That doesn’t mean work on ST will stop, just like it didn’t mean work on the Higgs and QFT didn’t stop before the LHC detected the Higgs.
