Why didn't they just use the bunch of grapes they used on pathfinder for JWST instead if this weeks long deployment?

Those grapes are airbags for crashing into Mars. JWST had to do five layer cryogenic origami and then use the rocket engine equivalent of hummingbird farts to insert itself into L2. It's a different tech for a different mission.
