Killing too many hosts is very bad for the disease's survival. The reason why sometimes appear diseases which are very harmful is because they jump from animals to humans. They evolved to be less severe in animals but, since humans are different, they're poorly adapted to us.
During the bubonic plague, so many people died that it almost went extinct. Without alive hosts, the disease can't spread.
The herpes virus, however, only produces a few rush if it produces symptoms at all, and well over 90% of the global population has it.
COVID was a bat disease, that's why it kills so many people, but it will soon evolve to be less harmful to people, we just have to wait it out.
