Why do physicists still hold on to the idea of particles with position and velocity if it's all waves?

Because it’s a useful approximation in many scenarios. Similarly how it useful to talk about a particle’s cross section.

Because when you actually measure it you find a particle with a position and velocity. The theory only tells you you cannot predict both unambiguously.
