Discussion on Parosmia After COVID-19

I had COVID-19 in October, and initially I experienced no loss of taste or smell. However, in the last two weeks, almost everything began having a rancid taste and smell: toothpaste, chocolate, nuts, etc. I spoke with someone who got sick at about the same time, different location, and also started having the same problem.

I'm curious to see why COVID could have such a delayed effect on smell and taste(nerve damage of some kind), and why certain foods don't activate it(in my case, dairy products and fruits). I'm also interested in possible treatments, of course.
