Coocking a chicken

Ok, I know that I'm a brainlet but please someone explain to me scientifically:

Why istead of cooking a chicken for 2 hours in 150 degr celsius (423 Kevin), I cannot cook it for just 1 hour in 573 degr celsius (846 Kevin)?

(assuming that my oven can reach that temperature)
