Because companies that produce GMOs don't care about nutrition. They want plants that can survive more intense herbicides so they can sell more of their products.

I've been involved with selective breeding of plants for nearly 30 years. If you want that plant today then you need to have started working on it a long time ago. In my situation, once I've conceived of the possibility of a new useful variety of plant to breed, its usually about a decade before the seeds are ready for use in production. I use indoor growing to get 3 generations of plants annually instead of just one, so that speeds things up for me.

You should quote parts of Leviticus that demonstrate that sand people from over 2000 years ago have better policies regarding quarantining contagions and plagues than we do today. Imagine, quarantining the healthy and still not being able to come up with a "proper" redefined definition of "vaccine", "herd immunity".

You could indeed feasibly breed out the phytoestrogen content in onions, I dont know why people wont do that though.

Breeding for nutrients is harder, usually nutrient concentrations are inversely proportional to plant size. So in order to get a high enough nutrient concentration to economically extract the plant has to get smaller and it depletes the soils faster.
