I'm not contradicting you, but genuinely asking the following question:
Is dark matter being undetectable really equivalent to belief in God / the tooth fairy?
I know both ostensibly function as placeholders for something not totally understood, but surely there's more to the theory of dark matter than mythological characters.

Not really. It's essentially "here is something that contradicts our theory. It must be due to the influence unexplained invisible actors."

Would it really make a difference if they said it was the god of darkness that caused galaxies to stay together instead of dark matter?

Adding epicycles was okay and was accepted at the time. Inherently there isn't an issue if it checks out by observation which it did. Once they saw the moons of Jupiter go around Jupiter in circles why wouldn't other planetary bodies go around in circles too. If you do this and have the sun in the middle of the system and earth an other planets move around this checks out. It is also a simpler model. If you have 2 different models that explain the same observation and one is simpler and is sort of backed by observation, I would 100% take the simpler model. The heliocentric model would also need to be modified to take in account how the motion of the planets and sun is not uniform.
