Memories retrieved by a cue and a memory. These are connected by association. A cue can only have a few associations. For example if I right now gave you the cue "car brands", you can only instantaneously recall about 3-4 car brands. Some might recall more "chunked" brands, ie brands that are associated with each other in your mind - like Mercedes-BMW, Toyota-Honda, and given time you can randomly search your memory for more. But they are directly connected to only a few.
Interference happens when your cue is overloaded by more associations than in can handle. By repetition of calling memories from that cue, you strengthen those associations while others weaken. Eventually the cue and memory are not associated, and you can never recall that memory.
