What is the "purpose" of diarrhea? I know it's expelling harmful shit from your body... but why? Say you infested some food with bad bacteria. Why couldn't your stomach acid just nuke that shit? is it really that weak that your body's immediate response is make you shit your pants?

bacteria have evolved immunity to stomach acid, without it they wouldn't be able to live in your intestines in the first place and help you digest food. Pathogenic bacteria take advantage of this and infect your gastro tract.

Your body is expelling the pathogen as quickly as possible. The faster the transit time, the looser the stool (and a slow transit time tends to lead to dry, hard stools). As for stomach acid, I actually believe it helps, I've eaten the same bad food as others and avoided illness, but some pathogens tolerate acidic environments very well. Norovirus can survive at the stomach's pH for several hours, and if it makes it to the small intestine then you're gonna have a bad time.

See for instance, the toxins of ETEC bacteria. Their toxins trigger the intestine cells to autistically pump chloride and sodium salts into the intestine lumen, thus creating a osmotic gradient that also secretes water into the lumen. That's how diarrhea is caused in the infection by said ETEC.
