What would you say that are the most important/essential things in physics?
Maybe some important characters, theories, common knowledge,etc.

Start with math first. It will help you a lot. Calculus and anything before is a basic requirement.

get as strong a grasp on math beforehand as possible.
follow the history of physics if you want important things. don't get sucked into worshiping dead people. it's cringe and not good for scientific-oriented mindset.
actually test things.
core stem offers a good range of topics, except some ppl seem to burn out completing it cause they can't see anything beyond it.

Great question, op. The answer depends on a couple of factors, mainly if you're interested in the experimental or theoretical side. I'm going to assume you're asking about the theoretical side, with this in mind Gerard ’t Hooft compiled a rather extensive list of what he believes the learning route to being a "good" theoretical physicist is. Personally, I don't agree with all of it, but Gerard is by all accounts a better physicist than I, so that might be worth your time to look into.
