When's a beam considered to have buckled?
Is it the moment you see a slight bend in it, or only once it starts to bend catastrophically and can no longer support any load?

when you pass the bifurcation point. after that the pure compressive deformation becomes unstable and the beam deforms in a bending mode. in your example the buckled beam can still support additional load (the postbuckling is stable) which is not the case for all postbuckling behaviour.

no, the structure buckles after the primary equilibrium path becomes unstable. this has nothing to do with plasticity

if you load a beam along its axis like in OPs pic it compresses. if you increase the load further this compressive mode becomes unstable and the structure bends to the side. the bending deformation is a lot less stiff than the compressive mode so for most applications the structure must be designed so this does not happen.
to model this and expecially the postbuckling behaviour a lot of nonlinear continuum mechanics and or finite element methods is needed
