Let's assume there's an infinite number of potential sounds you can make. (the infinite)
Not all sounds can be considered music because most of it is noise,
but a subset of all potential sound is music. (the subset)

Without LEM, a general subset is neither finite nor infinite.

e.g. the set
$\{x\in{\mathbb R}\mid x\ge 0\land \text{the continuum hypothesis holds}\}$

is classically at least either finite or infinite, but without LEM it's neither of those options (in ZF minus Foundation)

Not quite. You have to think of infinity more like how time progresses in the universe.
As example, in a 100m race in the Olympics, time starts as the runners leave their
starting blocks, and it ends when Usain Bolt reaches the finish line.
So it does not go on forever, it has a beginning and an end.

I was the OP all along. Based on the music example I formulated the OP. That's why I asked the question, but clearly I don't know anything about math.

You consider that a set? LOL. For something to be a set it has to be defined by meaningful conditions. CH is not a meaningful proposition. You might as well say
{x in R | x>=0 and santa claus has 80000 hairs)

Infinity has dimensions. Think of how many points are in the flat cartesian R2 plane vs the real number line R1. For each point on the line theres infinite on the plane, so the plane has infinite x infinite points.
