I wanted to start educating myself on astrophysics instead of going back to school since I've got a good job right now. Is there a particular textbook around the 1000 level or series of books anyone could recommend?

Are you sure you know what astrophysics entails? Most people actually mean cosmology when they say astrophysics. With AP you are literally just studying stellar phenomena. Also most of the lab work is simply cataloging. “Oh, here’s a star with property X” type shit.

Perhaps Astronomy then? After looking up cosmology it sounds way to un-scientific for what I'm thinking of. AP might be too specific.

Yes I don’t mean to discourage you. Maybe start with a general astronomy text and a cheap telescope if you can swing it.

For your recommendation though Intro to Modern Astrophysics by Carroll and Ostlie (colloquially known as the BOB or big orange book) is the standard upper level undergrad text. It does presume a knowledge of calculus but it is encyclopedic in its breadth.
