saturated for tropical people
the entire point of a polyunsaturated fat is that it can survive freezing temperatures without killing the plant. This is why butter/coconut are rock hard in the fridge, while olive oil only gets cloudy in the fridge (and vegetable oil won't even get cloudy)
This is also why literally every plant saturated fat source comes from tropical climates. Coconuts, cacao butter, palm nuts, shea nuts, ilipe butter, and hundreds more that I don't know about. If anything resembling those plants grew in a cold climate, it would die the second the temps hit the 55F
The reason polyunsaturated fats are associated with bad health is because
1) tropical people have health issues with them
2) some portion of white people (probably around 20%) have tropical phenotypes
