The brain doesn't really change composition as we grow, but seems to myelinate heavily around the beginning of adulthood. I don't consider this to be coincidental, since that's about when our habits start to become routine. Basically the formation of lasting habits means we no longer require the same metabolic rate to sustain our internal experiences, so the brain adjusts to match our optimized cognitive pathways. All we need to counteract this is a return to the open imaginative attitude of our formative years. By doing different things every day and exploring intentionally, we tell the body/brain that neuroplasticity is what we want, because that's how we're using it.
The other stuff will need some more effort.
