Y'know how the concentration of salt in water is called salinity? What's this exact thing called but instead of salt, it's for sugar? Sucrosity?

I'm not trying to be edgy, you're just not answering OP's question. Salinity has no equivalent when involving sugar. Molarity is close but not the same. It's like saying an inch and centimeter are the same. They're both units of measure, but not equivalent.

OP's question is arbitrary; a concentration of sugar in water does not warrant unique terminology any more than salt does. It's pedantic to insist otherwise, if you have any academic sense or acumen.

As I will repeat myself, salinity despite its accepted use, does not imply or necessitate the creation of other unique terminology when the scientific community has already supplied us with a general terminology for a mass of substance dissolved in a fluid.

As I'm aware, but real-life isn't so neat and tidy. When was the last time you bothered to do some analytical chemistry to determine your composition of sugars in solution and it was what you expected. Especially given Brix units apply to sugars generally derived from natural sources in wines and other such beverages, which contain fructose and other such natural sugars.
It's a pointless definition because it lacks rigor.
If you want to be anal about semantics, just call things that are containing salt, salty; likewise things that contain sugar, sweet. Trying to establish additional "scientific terminology" here is unnecessary.

I'd wager that the vast majority of people when they use the words salt and sugar are referring to sodium chloride and sucrose, respectively.
Add an 's' to the end of each the you get people thinking. take it a step forward, name the salts and sugars you want to quantify.
