For insect swarms go to their wiki pages and check out their cited books and papers. Then just follow the links to other research from there.
You won't find anything about swarms in human sociology books because the term "swarms" isn't used for humans (considered to be derogatory for some), but you may find what your looking for in research centered around AI.
