no one cares about your degree, just that 1) you have one and 2) its in a relevant field, and literally no one will ask about your minor past a few years out
-Data science is probs most flexible/general, no idea how it differs from AI since both will be based on machine learning I'm guessing
-cyber sec: sounds interesting, never cared for it
-AI: meme machine learning I'm guessing; again, no idea how it differs from data science, other than maybe in data science you do more statistical analysis (explanatory models) vs. predictive models
But seriously choose whichever one aligns with your interests, and/or if you have a good vision of what you want to do, which might be more helpful; I'd base that decision on the class subject/what you would learn there than on the title
