Google says "as fast as 3 months" but I fucking had them for years as a kid and they never got to the nerves. I only had them removed as a teenager and not even because of any pain or chewing problems or any inconveniences at all.

A very large dose of "it depends" is the boring answer to your question OP. If you got typical tooth-meets-tooth surface caries, associated with insufficient flossing, then they can go kinda fast. 3 months can be the difference between a standard filling and a root canal + crown.
Flat surface "mountain dew mouth" type caries, associated with too much sugar drinks, actually progresses slower, but I would still recommend fixing as soon as possible because it becomes very hard to get an esthetic outcome fast.
