Quite honestly, there is no absolute best book that you should use to learn anything. As long as it decently explains concepts to get the ball rolling for you to be able to understand and explain them yourself, it's fine. If you're in college, i suggest looking through your course catalog and using the books that are used in class.
Also, instead of writing notes in a notebook, i suggest writing whatever ideas or questions you have, directly in the margins of the book. For studying, use spaced repetition and active recall.
