why is math in sciences so much harder than math in pure math?

so im currently taking real analysis and signal and processing (ee major with math minor). so far im not having too much trouble around real anal (not besides getting accustomed to proofs and my brain being slow sometimes). however, when working with signals and fourier transforms, my brain seems to not be able to process shit. all the math seems arbitrary, with multiple leaps of logic. the notation is also clunky, which makes it even harder to understand as you read the text.

i've found this feeling in other subjects as well, like physics, but im currently feeling it much stronger than ever.
