are there field which pay big bucks,interesting new technologies,fun projects ME grads can major in?

Find a company that will finance your masters. Then you'll get an automatic promotion + pay increase, and be able to leverage that for better future positions if you want. I have at least 3 mech E and 2 EE friends that did just this.

If I have a gi bill I'm intending to use for a masters, so I pay for it myself, is that a good leveraging point when applying? Not OP btw, I have a BS in applied math

I don't know, but possibly, if you were to find a company that was interested in you. They might even give you more money to support that. Depends a lot on the person, company, and master's program. If it were me I'd just do the masters if it is paid for by the GI Bill and do internships/co-ops or whatever engineers do for work experience, if for no other reason than to try out different things and enjoy that freedom while it lasts.

oh I didn't read the math part. I think my answer still applies. If you're at all interested in quant stuff then, still, I would use that time to be very selective in the jobs/internships you take on and not just get a job to have a job. If you don't have the skills to be in the kind of role you want to be in, then seek out opportunities that will help you develop those.
