Does someone from Japan (e.g. Tokyo or Gifu) have a different brain than someone from the Southern United States (e,g. Kentucky or Tennessee)? I'm curious

Feral children (children who had no human contact during their first 18 months of life) all have IQs lower than 50, no exceptions. None of them can connect with languages after. Which is interesting, because there are people who are deafblind and become PhDs. I don't know exactly what goes on.

There’s research on hemisphere utilization in reading. There tends to be more right hemisphere involvement in reading hanzi/kanji than non-ideographic languages. I haven’t looked into it more than that but that’s a starting point.

but to answer your actual question about language "determining brain structure" read the following:

short answer: no, it doesn't
long answer: if you relax what you mean by "determine" a bunch, then things can get more complicated and some evidence of influence exists, but still probably not in the way you're thinking. really doesn't "influence" how your brain "works" any more than anything else you learn/develop biases for.
