How does something like this happen? Aren't engines supposed to easily evaluate 15+ moves ahead, so how is it allowed to walk right into a mate in 9?

That's the stockfish bot, it isn't full stockfish and it's far from full power. The version running on those sites are very weak.
These mistakes are almost never seen when stockfish and leela are playing at full power on TCEC for example.

Iirc stockfish uses alpha beta tree search, pruning certain moves at each depth. Obviously the rules it's programmed to use at that level prune the path too early. It doesn't calculate ALL paths to depth 15, basically. 15 is just the maximum depth it will go to.

The stockfish bot cannot look at all moves. It is too weak to do this. It regularly misses all sorts of tactics.

aside from the meme answers above; absolutely nothing. If you just set it to play at like 90-95% efficiency it will beat any human player while still being imperfect enough to be believable.

Stockfish doesn't use MCTS - it doesn't need to. Leela does because the resnets aren't efficiently updatable and alpha-beta would lead to very small search depths due to the overhead.
