Holography is based upon the interference of light. In a nutshell, two waves interfere in a 3d volume that can record the interference pattern. The interference pattern can the be re-illuminated in order to reproduce the original recording condition via diffraction.

light is electromagnetic in nature.
maxwell's equations imply that for an empty region of space, the electromagnetic field inside the volume is fully described by the field on the surface of the volume.
this is the holographic principle.
holograms recreate a field on the surface of a volume, and thus recreate the fields in the volume.
we see objects by the visible light they radiate.
by measuring and then recreating that light field over a surface, we can make it look like a tangible object occupies an empty volume.
