If you are very high iq, then you would probably be much better off doing a class that depends mostly on midterms and finals, because someone super smart can easily get a high score with minimal effort. in this case, youd want to evade project's like the plague. They are usually way too high effort. Again, play to your strengths, are you good at math? Chemistry? Bio? Take shit that you are good at (provided that you are taking the classes that are relevant to you - regardless of how difficult they may be)
Of course all of this reverses if you are not super high iq, then you need actually easy classes regardless of projects. In this case, you need to actually know the opinions of people who took the class. Id suggest you ask in the subreddit of that school. They might downvote/be against the rules, but someone will give you the actual answer
