Being vaccinated doesn't mean you're immune from any illness and that viruses will just bounce off you like you've got a force field set up. What it does do, is activate your own immune response to take out the viruses faster once they try to set up camp in your body. Without a vaccination, you have to rely on your body to figure out the solution by itself through trial and error. With a vaccination, you're basically providing your body a cheat sheet ahead of time so when it does encounter the virus, it knows exactly what to do.
So we get sick when we're still vaccinated because that's how vaccinations work. But we're not going to get nearly as sick as the unvaccinated do. Meanwhile, we also only got sick because holdouts are making themselves vectors for the continual spread of this disease, when we would have reached herd immunity by now and stopped this disease in its tracks by now had people played along and not worked against the public good like this.
