that's literally why though. hydrocarbon tail = more interaction between every individual molecule in the liquid, which means the molecules in the liquid are more attracted to each other, so it's harder to slosh them around, which makes them viscous which leads to them looking oily. acetic acid and linoleic acid are completely different molecules
