Linear algebra is easy because it’s useful therefore fun. Probably one of the only subjects you can apply once you get to the corporate world. You’ll impress people like crazy and have a great time doing so as well.

Combinatorial Problems and Exercises by Lovasz is probably the hardest book I've ever encountered. Some of the problems genuinely take weeks to figure out.

It's more of a second course in algebra for those who are able to look at all of abstract algebra as a whole and know how to prove mathematical theorems on a large scale.
