A bullseye "observes" the position of a bullet in space/time when you shoot it. We can estimate the bullets original trajectory from the evidence the interaction creates. The bulleyes "observation" transforms the bullet into shrapnel, destroying its natural state in the process. This hopefully illustrates how observing, measuring, detecting certain physical events can difficult.
Its the same reason its hard to learn about how human bodies work when all you can cut apart and inspect are dead cadavers.
