If we can't detect any curvature in the universe does that mean it's infinite? Why aren't we sure yet?

Experimentally, we have no way of finding out for now.
Theoretically, the math is missing some crucial pieces of info and must account for errors in measurement, for now.
We basically aren't ready for this kind of speculation, we miss knowledge and adequate instruments.

What is observable to us may just be so microscopic in the grand plane that we don't have tools precise enough to measure it, just like how the Earth looks flat while standing on the ground. It's far more likely, though, that it is infinite.
