Can someone explain to me the actual chemistry by which "high pressure and temperature" turns a dinosaur into oil?

Dinosaur is made of H C O N + minerals.
Heating one up under pressure and not in an oxygen atmosphere makes its molecules break up and rearrange. Things with low boiling temperature like N2, CO2 and H2O boil off leaving blocks of carbon and big hydrocarbons behind.

Carbon from plants i get it. Is it some form of fisher tropsch? Carbon with water turns to CO and hydrogen?
One thing i domt get is the sulphur. Living beings do have sulphur but is it a much as in some coals?

but animals dont get buried in the sediment when they die? they decompose... probably faster than in air because the salt helps it decompose???
