If you're serious about learning how to be a better player, GNU Backgammon, despite being incredibly dated, is the best for it. Most of the backgammon games you find in app stores have terrible computer players where the difficulty level is really a 'how much can the computer cheat' level. With GNU, better levels means actually better play, though you can adjust it so dice are not fair and give out more lucky rolls.
