De novo lipogenesis is very metabolically expensive, so the body simply upregulates metabolism to deal with extra glucose (carbohydrate) as well as other things. If you eat 5000 calories a day of white rice with the bare minimum of fatty acids and vitamins/minerals, you won't get fat or it will literally be at far slower of a rate than CICO would ever suggest. CICO is true insofar that eating at a caloric surplus causes the FAT in your diet to be stored (there's also other problems with it, but that's a big one, lol). If there's almost no fat in your diet, the metabolic pathway that converts glucose to fats is literally so inefficient that the weight gain is a fucking order of magnitude less.
