Actually not quite. While your kid was exactly half-German half-French, this is due to them having exactly two chromosomes of different nationalities. When they had a kid they donated a 23 chromosomes which paired up with the other. The recombination happening in your child's donor chromosomes isn't 100% exact in splitting, their donated chromosomes don't have to be 50-50 German-French. Therefore your grandkid likely isn't a 50-50 split, there's probably at least an extra 1%, but larger differences become progressively less likely however.
