Is it just coping for animals and people with no one to mate with?

Because your hand isn't as wet, soft, and warm as a vagina. You're only stimulating the penis head, not the hundreds of nerve endings in and around the foreskin. The brain also reacts (releases hormones) to visual stimuli when seeing mating partners, even porn does not give you the same level of visual stimuli as mating with a real woman.
