The US is an automobile focused nation. There were lots of young people dying in drunk driving accidents so it was decided that raising the drinking age by a few years would get them past their dumber years before they could buy alcohol. If self driving cars become commonplace and they're fully autonomous, perhaps the drinking age will be lowered again.
Also keep in mind that just because it is illegal for someone under 21 to buy alcohol doesn't necessarily mean it is illegal to consume it. In many places it is legal, especially when one's family is present.
