Because we don't fully understand it yet and there is so much going on.
We just use models that try and simplify things but that's not accurate. Having an accurate model would imply being able to take into consideration every variable.

Mechanical models have a ton of assumptions, but generally, in the grand scheme of things, a lot of those neglected variables are negligible or miniscule enough to be treated as so.

That's not true though. Chemicals post helium form in supernovae as fusion products, and then they start reacting chemically in the resulting clouds due to gravity tugging them around.
