Is it scientifically accurate to say that electromagnetic waves that are not in the visible spectrum are just "invisible light"?
It makes EM waves much more intuitive to understand IMHO

Depends on how familiar the person is with light. Diffraction and reflection changes significantly when the wavelength changes.
EM is pretty near visible light, so these effects aren't too different, but once you get to radio frequencies you'll have to reconsider the "invisible light" model.
I'm not too familiar with the radioactive spectrum, so someone else will have to chip in on that,

Assuming an alien species developed with another star/atmosphere combo where the predominant EM radiation was of a different frequency slice, and assuming they developed “sight” in the way that we understand it, can we infer what they would see? Like if their ‘eyes’ had evolved to see gamma rays or radio waves

probably still in IR and UV region.
Radio is too long of a wave length to see most things clearly based on resolution of optics to wavelength and object diameter, let alone the size of receptor to form an image, too penetrative to be reflected off the organic surface, and really isn't the bulk of the blackbody radiation.
Gamma is too high energy to genetic materials and penetrative.
