Is trying to become a master at 3 scientific fields spreading yourself too thin?

I know supposedly you only need 10 thousand hours to become a master at something, but honestly that sounds way too good to be true, 10 thousand hours is easy if you're engaged into it

Depends if they're related or not. I guess you could probably master Math/Physics/CS since they share a lot of things. Or Psychology/Sociology/Economics or Chemistry/Biology/Psychology. Or if you're into engineering Electric/Computer/Software engineering. You can probably think of more

if you believe 10k hours in something automatically makes you a master, I've got some bad news... or possibly good news... but if probably bad news if you believe in 10khours/master

10k hours (which is shaky research) is the minimum to get to the top level with deliberate practice. That's also for instruments like violins, you're building a flimsy tower on shaky ground if you try to apply that to other things like entire fields, they're not skills that you're training they're knowledge.
The key thing is deliberate practice, there's plenty of people with >10k hours who are still middling violinists because they didn't have a good tutor to fix their mistakes and they just played around for fun instead of deliberately finding where they need to improve.
The 20 hour rule is a much better rule imo, you need around 20 hours of deliberate practice in any skill to have a decent level of proficiency. If you're trying to be a polymath that's a lot closer to your target. But again that's for skills which is a completely different thing to a field, there's hundreds of chemistry skills, physics skills, engineering skills etc.

It's definitely possible, but you have to realize that you are studying something beyond the subjects you're trying to master. Polymathy is a field in and of itself, not merely a combination of different fields, but a thing that can only be learned by mastering different things.

As you learn this field, it gets easier to learn other things, as you begin to see the patterns that exist within and around everything. (It never becomes quicker, though. Not practically.)

It's more about will than limitations. Someone who's genuinely intelligent will naturally master something he spends enough time in. The issue is that most people don't have the desire or discipline to really study something in depth. Most people can't draw, play an instrument, do algebra, discuss the history of philosophy, program, etc. And why would they? There's no express need for them to do so. It's the lack of will to engage in these fields in depth that causes the scarcity of masters, not limited time or mental faculties. In fact, specialization is largely a meme. Historic geniuses tend to develop a general intelligence and through the use of patterns are able to engage in any subject they've become fluent in at a high level. There's a very notable difference between these types and the person who just grinded a lot of studying and is able to do the academic equivalent of reciting trivia.
