Eating 2000 calories worth of fiber filled plants will also digest slower and less efficiently, whereas meat digests faster and more efficiently.
Ideally you want something that optimizes acidic breakdown and "passthrough" time. Oats and meats and multivitamins (for general health) do a 'good' job with oats providing a slow release mechanism with a rich energy quantity (compared to most plants) and meat being digested relatively quickly, vitamins also break down and can be absorbed faster with good digestion, although I am sure with some chemistry tweaking someone can make a food that does a 'great' job.
