It only works in vacuum chambers because if you get in gases such as chlorine the sodium would probably react and the droplet would blow up.
If used in the real world it could cause fires if not properly managed.
For scientific tools and research it could possibly be useful but I don't know what for.

It's blue sky research, no one has any idea if it'll be useless or revolutionary. The next goal should be removing it from the drop and getting a decent amount of it to test properties, if it turns out to have useful properties it's then worth the effort to try removing it from the vacuum or finding a way to use it while still in a vacuum tube.
