While unifying QM and GR seems like the most promising way now, who is to say one or both isn't going to be scrapped and rapleced by another theory (or theories) and unifying those is what leads to a theory of everything? Then 500 years later, QM and GR can be revisited and explained properly through those different set of theories and the theory of everything.

Lots of mathematicians work in physics problems. The problem isnt about mathematics because you just dont know how reality actually is. You can define mathematics with crafty axioms and then see where that leads, with physics you have no logical chain, just hints from different experiments.
Most concepts in physics cannot be logically deduced from former concepts.
