We can do that exactly in classical mechanics because position and momentum can be simultaneously known and the entire system can be described using them.
In quantum mechanics these are only observables of an underlying quantum state and don't describe the system alone. That is the quantum state is what describes the system and the only way to learn information about the quantum state is through the observables. Some observables are incompatible with each other (such as position and momentum) and cannot be known simultaneously to perfect precision (Heisenberg uncertainty principle) as they are dual to each other and can only be known with higher precision with loss of precision in the other.
