Depends on how you wish to study them - more theoretically or more practically?

Bsc in physics, or theoretical physics
Msc in theoretical physics, focusing on quantum physics and quantum chemistry and computational methods used for molecules
Phd in biochemistry from a primarily computational standpoint - computations of interactions of prions and other molecules, etc., compare with known experimental results

Bsc in biochemistry
Msc in biochemistry with focus on proteins and other molecules in neurons OR cellular biology with focus on neurons
Phd in biochemistry primarily from a labwork standpoint - investigate action of prions in cells and their intercellular action

Also, just like e with any work: Your degree doesn't really matter in the end (it really just erves as an entrance ticket) so no matter what you study, what will make you work a lot in this field is WORK EXPERIENCE.

So most important actually: Work in a prion lab, as early as possible. Many labs do take students during their first year for stupid tasks but you will learn much more about prions spending time with prion scientists than in a lecutre.

Literally anything to do with biology. It straight up does not make a difference, as long as you learn the basic of biology, it's doesn't matter if your degree title is biology, biomedical sciences, biochemistry, genetics, microbiology, etc. Shit is all the same.
