Does LaTeX actually make sense? I really love that knuths computer modern font, whenever I see it I feel closer to Aldo Manuzio, but I want to create professional grade documents FAST...

Wouldn't I be better off studying the intricacies of Libre/OpenOffice/Microsoft word?

Yes. But please don't use the default font. Most journal/conference would have LaTeX template for you to use

I don't have a journal or a conference. I just want to make nice documents, for personal gain.

Would you recommend any template in particular.

Aside from that, the default font is gorgeous, knuths computer modern is a rival to EB Garamond.

as a life scientist, I never actually bothered to write in latex. I guess it's fine for my math and cs friends, who have plenty of spare time, need no time in lab, and are autistic enough to spend hours editing single page. I have been completely fine with Word and its equation editor, that is on quite good level now (equations with plenty of indexes, matrices...) and can even work with latex input

Then LaTeX is probably not for you. It is good at making professional grade documents WELL, not fast. It has an assumption of quality over quantity.

LaTeX is generally used for its stability. Decades old tex sources can still be compiled into exactly the same pdfs as back then. In contrast, the old math language in Word was phased out in the 2000s due to a security issue.

If you just want to create documents fast, markdown with some MathML plugin is probably the best choice. It lacks many features, such as citation management, but it's fast.

Maybe I've been using it too long, but if you're making just a basic document for example TeX is very fast for me. Sure it's not as fast as having to type no commands, but it's not like it takes hours to write a letter. The more complex the document the more time it takes, but also the more important it is to have the control TeX gives you.

Write in markdown use a latex template. Asciidoc is better but the integration with latex isn't as good as with md. Org mode if you like emacs.
