It's not a paradox, and the "overlap" is "understood" the wrong way round by most people.
It's not the box that's in two states at the same time, it's the observer that can't distinguish, if he is an observer in a world where the cat is dead or if he is an observer in a world where the cat is alive.
For the world he is in the cat is in a clear-cut state of alive or dead, which gets revealed to him once he opens the box.

Then I can rephrase my question: by treating both the cat and the cat owner as one big quantum system, you should be able to predict what happens when the owner opens the box by using unitary evolution alone. What will the result be?

No, you will only be able to predict the evolution of the wave function. Only then when the cat is observed will the state be observed to be some random eigenket of the observable (for which the probability is related to the associated eigenvalue)

Schrodinger's cat is literally just a thought experiment to poke holes in Copenhagen interpretation and it's not even right. the scenario posed by schrodinger is impossible according to the Copenhagen interpretation since the superposition is impossible to observe so you can't tie an action to an electron behaving as particle/wave. there are other versions but obviously people took the most understandable one and stripped it of all substance
