Like, imagine a bucket full of pencils. You can throw it on the floor and make a mess but putting all the pencil back into the bucket is way harder and needs a lot more energy than just throwing it onto the ground.

It's not order or chaos. Given m states, there is a subset m that would appear ordered to you. Let's say there is an equal chance of each state. It's not that order decays into chaos so much as the universe is random and there are a larger number of states that seem chaotic to you than ordered.
